
there is a st augustine tradition (courtesy of my good friend sarah) of dedicating each summer to a particular fruit. in 2006, it was the summer of the raspberry, last summer it was the summer of the lime, and this summer, it is the summer of the pineapple. each summer presents the opportunity to explore different ways of using its respective fruit, and i am excited about trying out some pineapple recipes! here are a few that i found thanks to martha stewart, my cooking idol (i love her recipes, not so much her criminal record). this recipe, pineapple with rum-vanilla glaze, is best served over vanilla ice cream, but would probably be great all on its own if you are like me and you are not allowed to eat ice cream. jerk chicken with pineapple anything is one of new favorite things, so here is a recipe that i will probably try soon: jerk chicken with pineapple cilantro rice . hummingbird cake is one of my all time favorite things, but because it has cream cheese icing, it is off limits to me. but i thought that i ought to share this recipe anyways: hummingbird cupcakes.
this morning, i found a whole bunch of my mom's recipe cards (sorry mom, didnt know i had those...). i think that for the fourth i will try to make my grandmother's recipe for pineapple upside down cake (that is, if i can find a brand of margerine that has no dairy in it).
